Thyme (Thymus vulgaris L)

Perennial thyme is a member of the mint family (Lamiaceae or Labiatae) and grows to a height of around 20 to 40 cm.Thyme flowers are pink to violet in colour.

Thyme has a strongly aromatic fragrance and a distinctively bitter spicy flavour. It is a definite ingredient in the traditional French “Fines Herbs” and is used to season meat and fish dishes, soups, sauces, salads, vegetables and potatoes. It is a favourite in herbal vinegar. Alongside its seasoning property, the herb has antiseptic and conservation agents which are beneficial to sausage products. For this reason, many sausage seasonings, especially boiled sausage, contain thyme.

Thyme is also used as a spice in the beverage, cosmetic and as a drug in the pharmaceutical industry.
